Zariphean tea.  Blend of tea with a high amount of caffeine.  According to Commander Tucker, it could keep you up for days.  ("Breaking the Ice" [ENT]).

Zenopaldis athemia.  Disease that can be highly contagious.  Captain Archer apparently had the disease while in a Klingon prison, and Phlox came to treat him.
  ("Judgment" [ENT]).

Zepht.  (D. C. Douglas).  Denobulan geologist who studied cave formations on Xantoras.
  ("The Breach" [ENT]).

zero-g training.  Standard Starfleet training for use of environmental suits in micro-gravity environments.  Hoshi Sato struggled through her training.  ("Fight or Flight" [ENT]).

Zho'kaan.  (Gregg Henry).  Arkonian pilot who fired upon a shuttlepod from the S.S. Enterprise.  After pursuing it, he crash-landed on the surface along with Commander Tucker.  They briefly scuffled before cooperating in order to be saved.
  ("Dawn" [ENT]).  Henry previously played Gallatin in Star Trek: Insurrection.

 

Zobral.  (Clancy Brown).  Leader of a resistance cell against the Torothan government.  The Enterprise answered a distress call from him and helped repair his shuttle.  Zobral then asked Captain Archer down to the planet to have dinner and play geskana as a pretense to ask for help from Enterprise in fighting the war on his planet.  ("Desert Crossing" [ENT]).

Zoumas.  (Sean Whalen).  Prisoner onboard an Enolian prison ship who Commander Tucker had to sit next to.  Tucker found him to be very annoying because all he did was talk about various places he'd been and various foods he had eaten.
  ("Canamar" [ENT]).

Zshaar, Khata'n.  (Brad Greenquist).  Captain of an Arkonian military vessel.  Zshaar helped the S.S. Enterprise search for a missing shuttlepod and one of his own shuttles in the region of a gas giant that contained 62 moons.
  ("Dawn" [ENT]).  Greenquist previously portrayed Demmas in "Warlord" (VOY), and Krit in "Who Mourns For Morn?" (DS9).
